Mostly Criollo, approximately 25% Forestero and a very small amount of Trinitario.
Certified Organic (CERES)
Crayfish Bay faces west overlooking the Caribbean Sea. The land, 13 acres of which is under cocoa, has five natural springs and is steep so has natural drainage. The soil is acidic and has high organic content due to the constant defoliage of the cocoa.
Kim says “we try to keep the minimum pick to around 500lbs as any less than this does not reach the temperature needed for correct fermentation”. Very careful attention is paid to the fermentation and drying on the farm, including someone watching vigil for rain to cover the drying beans if needed.
The beans are bright, with a balanced acidity forward fruit, developing vegetal notes and balanced bitterness.
