    Cissy Difford is a pastry chef, food writer and recipe developer currently based in London. She has spent time working in bakeries in the UK and Ireland, including Scéal Bakery, Hamblin Bread and Quince Bakery. You can keep up to date with her on Instagram and by subscribing to Roll With It, her monthly food newsletter, in which she shares seasonal recipes and in depth information on pastry techniques.

    In the workshop you will be guided through the fundamentals of baking. You will be given an introduction to key ingredients, with a particular focus on types of grain. You will be guided through a hands on demonstration learning how to mix rough puff pastry, how to perform folds on the dough, as well as baking and shaping techniques. 

    Each participant will take home their very own sweet or savoury seasonal galette and a new found confidence in baking! The workshop is aimed to introduce students to key techniques that can be applied when following a range of pastry recipes. This knowledge will be especially beneficial for those students who wish to level up their pastry game by taking on more challenging doughs such as puff pastry. You will leave the class with lots of knowledge and handouts to duplicate your learning at home.

    The day will run from 11am until approximately 4pm, and includes a seasonal lunch.
