A dark chocolate inspired by the traditional chocolate made in Modica, Sicily using the ancient Aztec process. There the chocolate is not conched, but ground with sugar at a low temperature such that the sugar stays crystalline, resulting in a crumbly, varied texture. We have made our own version with a deep and woody Jamaica 90% chocolate from Desmond Jadusingh's farm. We have conched the chocolate to bring out the best flavour and we have added demerara sugar which brings crunch in the Modica style. The resulting sweet finish counters the tannins in the chocolate.
